There are two different kinds of fuel to use for Alchemy: charcoal and wood. You can use lump charcoal or briquettes. We recommend using seasoned hardwood split logs on the upper unit. The smoker can be supplemented with wood chunks to add a depth of smokiness.

Charcoal briquettes are great for low and slow cooking as they produce long-lasting heat. Lump Charcoal burns hotter and adds more flavour to your food; therefore is great for hot and fast cooking. It has a significant ability to impact flavour.

Ash build-up should be removed regularly to maintain proper air flow. The exterior of the Alchemy is powder coated and wipes clean easily without using chemical cleaners. Inside, residual heat burns off grease build up. Other than removing ash, wiping the outside after each use and brushing the cooking grates, regular deep cleaning isn't required. As part of annual maintenance, removal and cleaning internal parts is recommended for optimal function and longevity.

Yes, however we recommend placing tiles or a grill mat underneath Alchemy if you decide to use it on a wood deck or any other flammable surface.

There are a variety of ways to light your charcoal. First, start with good, dry charcoal made of premium hardwoods, because they light easily, maintain a steady cooking temperature, and burn longer. We recommend using a charcoal chimney. A chimney arranges the coals in a vertical column allowing the coals to heat to a very high temperature in a short period of time. Place the chimney on the upper Alchemy grill grate over crumpled paper or a fire starter. Let the charcoal burn until they have a coating of light gray ash which typically takes 10-20 minutes. Once your charcoal is ready you can place in the upper unit or lower unit depending on what you are cooking.

A plancha is a common flat-top griddle used in Spanish cooking that combines high-temperature searing with a small amount of smoking.
