The ultimate thick and juicy smoked steakhouse burger. Ground prime rib, smoked and then seared over live-fire, topped with caramelized onions and gorgonzola, grilled mushrooms and sandwiched between cheesy, toasted garlic bread. Make it a single or a double, but make it, you won't regret it. This is such a delicious burger recipe and so easy to make, and something different from your usual burger on the bbq.

Ingredients

½ lb ground prime rib

1 white onion

2 tbsp butter

½ cup beef stock

2 tbsp gorgonzola

1 tbsp finely chopped fresh thyme

8 shitake mushrooms

2 slices Garlic bread
-
8 slices gruyere cheese
Instructions
Set smoker to 250F.
Finely slice your onion with a mandolin or sharp knife. Place a cast iron pan on the elevated rack. Add some oil onto the flattop and add the onions, cook, flipping occasionally until softened and browned, about 2-3 minutes.
Add the charred onions to the cast iron pan, pour in the beef stock, add the butter and gorgonzola and mix. Take the thyme off the stems and finely chop and add to the pan. Mix and let cook 1-2 minutes then transfer to the smoker. Let smoke for 30 minutes, then add four slices of cheese. Let smoke until cheese is melted, about another 5-10 minutes.
Form the burger patties, season with salt and pepper on both sides, place in smoker on a metal sheet tray and smoke for six minutes.
Cut the stems off of the shitake mushrooms and cut them in half, place them on the flattop with some oil and allow to cook, flipping midway, until crisped up, about 5-6 minutes.
Remove the burgers from the smoker and sear on the elevated grill rack, about 1-2 minutes a side, depending on your desired doneness.
Toast the garlic bread on both sides on the flattop, then add the mushrooms to each piece. Place two slices of gruyere cheese on the mushrooms and let it melt.
Remove the onions from the smoker and give them a mix.
Remove the garlic bread from the flattop and place on a plate or cutting board. Place one burger patty on the bottom slice of toast on top of the cheesy mushrooms. Spoon the smoked onions onto the burger, then place the second patty on top, spoon on more onions and close the top. Slice in half and dig in.
