Here's how you take your smoked turkey holiday leftovers and make something you crave more than the original meal. These Smoked Turkey Bacon Banh Mi sandwiches combines flavourful and fresh smoked turkey salad made with chopped carrots, celery, fresh cilantro and a mix of bright banh mi flavours, with crispy smoky thick-cut bacon and a melted cheese skirt for the bun. It's certainly anything but traditional, but also the best way to repurpose those holiday leftovers. You're going to want to give this recipe a try!

1 drum and thigh of leftover smoked turkey

2 sub buns

½ cup shredded Mozzarella cheese

3 celery stalks

2 small or 1 large carrot

¼ cup cilantro, chopped

2 tbsp black & white sesame seeds
-
1 tsp soy sauce
-
3 dashes fish sauce
-
¼ cup Sriracha (or adjust to taste)

¼ cup sour cream
-
1 tbsp sesame oil
-
1 tsp seasoned rice vinegar, plus extra

6 strips thick cut bacon

1/3 English cucumber

¼ iceberg lettuce
Instructions
Remove the meat from the leftover smoked turkey and chop to desired texture and place in a bowl. Finely chop the celery and add to the bowl. Add the sour cream, Sriracha, soy sauce, fish sauce, season with pepper and mix. Add the sesame seeds and mix. Finely chop the carrot and cilantro and add to the smoked turkey, season with sesame oil and rice vinegar then mix to combine.
Using a mandolin or sharp knife, thinly slice the cucumber into rounds and shred the lettuce.
Cook the bacon to your desired doneness on the flattop. Once bacon is done, move to the edge of the flattop to keep warm.
On the hottest part of the flattop, add the shredded mozzarella, in two piles, about the length of your sub bun. Allow to melt and bubble. Cut the sub buns in half lengthwise, but keep one side attached. Place open, face down onto the melted cheese on the flattop. Allow to cook about 30-60 seconds and then using a long metal spatula, flip the buns keeping the cheese intact on the bun. Add three strips of bacon to each sandwich and then remove from the grill.
On your work surface or a plate, build your sandwiches. Add a layer of sliced cucumbers on one side of the bun and then the shredded lettuce on the other. Drizzle with rice vinegar and season with salt, then spoon on the smoked turkey salad. Place the sandwich on a large piece of parchment paper. Close and roll the sandwich in the parchment paper then cut it in half.
